The Arm Roast is similar to the Chuck Roast as both are shoulder roasts; however the arm roast is further down the shoulder, towards the top of the leg and leaner in fat content. This cut is also great for a roast as well as any other recipe where you braise and cook the meat low and slow which tenderizes the lean muscle.
