Like a flat iron but different! This steak is a crosscut of the blade roast and is packed full of flavor and marbling. Unlike the flat iron where the steak is filleted off the connective tissue, the top blade still has it so it makes a perfect steak for braising where that tissue melts into tender melt-in-your-mouth bites or slice it up into thin strips for stir-frys, fajitas, tacos and more! Try braising with red wine, mushrooms and onions and serve on top of mashed potatoes with the jus - perfection!
