It may be called a steak but the best way to cook this highly, marbled, flavorful cut of meat is by braising or slicing as there is a line of connective tissue that runs through the center of the steak.  By braising, that tough tissue breaks down for a most and tender meat or slice up the steak (throwing out the connective band) and have the most tender bison meat strips.  This is my go to fajita strip!
