This is the BEST Cuban sandwich I have ever had, so much flavor, and the bison added such a depth of velvety texture and flavor. I decided to make this sandwich because I was looking to use up some leftover shredded bison, check out the recipe here, and I knew that Cuban sandwich day was coming up. There are different varieties of Cuban sandwiches, aka Cubanos, however traditionally they all contain white bread, Swiss cheese, sliced ham, pork, dill pickles and mustard. I stuck to the basics and the only change I made was subbing out the pork with our leftover bison, and my goodness this sandwich was ridiculous!
8 - 12 slices swiss cheese – feel free to add more, but definitely don’t skimp on the cheese!
8 slices ham – add more or less to personal preference
Thin dill pickles, either round chips or sandwich slices
2 TB Yellow mustard
1 TB Mayo
2 TB butter
Cuban bread loaf – this can be tough to find so substitute any white bread deli sandwich rolls or French and Italian bread. Avoid baguettes, you want the crust to be thin and the interior to be soft
Have 2 skillets handy, ideally cast iron
Directions
Slice bread in half
Mix mayo and mustard together
Spread mayo/mustard mixture on each half
Add a layer of swiss – do not use all swiss as there will be 2 layers per sandwich
Add ham
Pile on the bison meat
Top with pickles
Cover with the remaining cheese
Place tops on each sandwich
Melt butter in one of the skillets over medium heat
Add sandwiches to skillet
Take second skillet and set evenly on top of sandwiches and lightly press down
*If using a cast iron, you can leave the skillets alone, if using a lighter skillet, continue using pressure to press the sandwiches or add weight on top like canned goods, rocks, a brick or anything else random!
After 3 – 4 minutes, remove top skillet and flip sandwiches
Replace the top skillet
Cook until cheese is melted and both sides of the bread are a toasty golden brown, another 3 – 4 minutes

* Don't skimp on the cheese because it serves as the glue to help keep the sandwich components together, plus it adds creamy texture
