Grilled Bison Ribeye with Romesco Sauce
This is your excuse to get out and grill no matter the weather! Cold does not always mean soup, warm your hands over the grill and warm your soul with your favorite scotch and enjoy the moment.
Grilled Ribeye with Romesco
Ingredients

2 bison ribeyes

Garlic salt
-
Fresh cracked black pepper

Smoked paprika
-
Ziploc bags or vacuum sealer

Sous Vide
-
2 Red bell peppers
-
4 Roma tomatoes
-
3 garlic cloves
-
1 cup of pecans
-
Small bunch of fresh Italian parsley
-
2 tsp smoked paprika
-
1/2 cup extra virgin olive oil, approximate

2 TB red wine vinegar
-
Salt & pepper to taste
Steak
Romesco Sauce
Directions
Steak
Season both sides of steak with salt, fresh cracked black pepper and smoked paprika
Let rest for approximately 20 minutes
Vacuum seal steaks or place in large ziplock bags
Submerge bags in a container of water
Add Sous Vide and set for 130 degrees, cooking for 1 hours
Heat the grill to high heat
Remove steaks from water and bags
(at this point the steaks are cooked to a perfect rare)
Place each steak on grill, over direct heat and sear for approximately 1:30 per side, or until you reach desired internal temperature
Remove steaks and let rest before slicing
Romesco Sauce
Preheat the broiler
Cover a baking sheet with foil
Place tomatoes, peppers, garlic and pecans on baking sheet
Place in broil and cook for 2-4 minutes, until they start to char
Flip each ingredient and continue to cook for an additional 2-4 minutes to char the second side
Remove from broiler
In a food processor, add ingredients from the broiler plus the smoked paprika, red wine vinegar and salt & pepper
Turn processor on to low and begin to drizzle olive oil into the mix until it reaches a thick sauce consistency
Taste sauce and adjust seasoning to your likeness by adding salt, pepper, vinegar or even red pepper
Allow sauce to cool to room temperature
Top your perfectly seared steaks or use the sauce on the side for dipping
