Bison Breakfast Sausage
What is better than breakfast in bed for Mother's Day! These easy bison sausage patties can be made ahead of time for a treat that will surely make her smile.

2 pounds ground bison
1 TB fat (bison tallow, duck fat, lard, crisco, etc.)
3/4 TB salt
1 TB light brown sugar
2 tsp rubbed sage
1 tsp coarse black pepper
1/4 tsp cayenne pepper
Combine and incorporate all ingredients in a large mixing bowl
Cover and refrigerate for up to 24 hours
Divide into 2-3 ounce portions, shape into balls and then gently press to form patties to desired thickness
Heat a cast iron skillet over medium high heat
Add patties and cook thoroughly, approximately 2-3 minutes per side
These are great for breakfast sandwiches or enjoyed on their own on a breakfast platter.
You can also leave the meat as ground and cook in the skillet stirring to brown and use as ground sausage for breakfast tacos, burritos, casseroles and more.
Sausage is easily reheated by placing int he microwave for 2 -3 minutes, make sure it is heated thoroughly before consuming.
