The Bone-In Arm Roast is a hidden gem of a cut. Like the chuck roast, it is a shoulder roasts so it becomes a wonderfully tender meat once slow cooked, braised, smoked or stewed. What makes this cut so special is the leg bone that is in the roast which is full of marrow or "butter of the God's" as we call it. The bone-in arm roast is really just a larger and meatier version of a shank!
